11. Mediterrane Ernährung

Zusammenfassung

Seit der ersten wissenschaftlichen Studie zu den gesundheitlichen Auswirkungen einer mediterranen Ernährung belegen zahlreiche Untersuchungen mit hoher Evidenz die positiven Effekte dieser Kostform. Sie ist definiert durch hohe Frischkostanteile, den Verzehr von Vollkorngetreideprodukten und andere Aspekte, wie sie auch bei der Vollwert-Ernährung empfohlen werden. Nach einem bereits im Jahr 2000 getroffenen Konsens zum Inhalt einer mediterranen Ernährung wurde sehr früh ebenfalls über historische, ethnische, ökologische und soziale Aspekte dieser Ernährung diskutiert, die in ihren Grundzügen von Angehörigen verschiedenster Völker, Nationalitäten, Religionen und sozialen Schichten konsumiert wird. Dabei wurden vergleichbar der Entwicklung der Vollwertkost im deutschsprachigen Raum schon sehr früh auch Kriterien der Nachhaltigkeit berücksichtigt.
